Filtration
In the production of Elan Whey Protein, cross-flow microfiltration has been used. Cross-flow microfiltration and ultra-microfiltration make use of the molecular weight of whey. Whey is heavier than lactose, and using a ceramic membrane separates the two. The whey is retained in the membranes, while lactose and other undesirable components are not bound. An advantage of this method is that all the benefits of whey are preserved, and a very high protein percentage is achieved. A disadvantage is that this process is very costly.
